400 g red sweet potato
230 g red lentils
½ white onion
A sprig of rosemary
Put the diced onion in a pan with a little oil. Leave to brown then add the other ingredients and cover with boiling water.
Skim the surface of the water from time to time.
When the potato is well cooked, blend everything with an immersion blender and add the finely chopped rosemary with a knife.
This was a great dish! The sweetness of the sweet potato and the lentils balanced out the bitterness of the rosemary.
