Farinata, chickpeas flat bread

Ingredients

  • 200 g chickpea flour
  • 500 ml water
  • 1/2 teaspoon salt
  • 40 g olive oil
  • 200g boiled spinach or other herbs
  • 1/2 onion
  • 1 garlic clove
  • rosmary

Directions

Pour the chickpea flour into the water stirring with a kitchen whisk.

Leave it to rest for 3h, and remove the foam that may form.

In the meantime in a pan put the chopped onion, garlic and 4 spoons of olive oil to brown, then add the spinaches or other boiled herbs, adjust salt.

Pre-heat the oven at 220°C

When the chickpea mix is ready, add 40g of olive oil, spinaches, rosmary and adjust salt.

Put in a baking tray and bake in the oven for 20′ more or less, until it form a browned crust.
