Ingredients
- 1/2 cup brown sugar
- 2 eggs
- 1 cup all purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup oil
- 1/4 cup milk
- 1/4 cup orange juice
- 1/2 cup molasses
- 1 teaspoon vanilla extract
- 2-3 teaspoon gingerbread spice mix depends on how strong you want the flavor to be (it can be replaced with pumpkin pie spice mix)
- a pinch of salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
For chocolate glaze:
- 1 cup confectioners’ sugar
- ½ cup cocoa
- 6 tablespoons water
Directions
In a saucepan add the molasses, juice, sugar and oil and heat them while stiring until the sugar disolves. Set it aside to cool.
In a bowl sift the flour, salt, spices , baking powder, baking soda and cocoa and set aside.
In a separate bowl add the cooled down molasses mixture then add the milk, eggs and vanilla extract and mix until well combined.
Fold the flour mixture into the molasses mixture until well combined.
Pour the batter into a baking pan lined with butter and flour.
Bake in a preheated oven at 160C for about 40 to 50 miuntes. After 15 minutes remove the cake from the pan and let it cool down completely on a cooling rack.
Meanwhile prepare the chocolate glaze by mixing all the ingredients untill well combined and pour it on the cake when it completely cooled down.
