For the crêpes
- 2 eggs
- 160 g flour
- 330 ml milk
For the artichoke sauce
- 6 artichoke hearts
- 1/2 onion
- 1 garlic clove
- salt &pepper
- 6-7 nuts
- 10 slices smoked ham
- cheese (mozzarella or other you like)
Blend together the crêpes ingredients, then put in the fridge for about 30′ to rest.
In the meantime cut the artichokes and onion, put them in a pot with olive oil, the garlic and parsley, salt and water. Cok until tender (30′ more or less) Blend everything with olive oil, 3 nuts, 3 spoons of parmesan. Then adjust salt and pepper,
Butter a pan and pour a little crêpe mix until you cover the pan, cook for about 2 minutes per side.
Pre-heat the oven at 180°C
Stuff the crepes with the artichoke sauce, cheese cubes and the slice of ham.
Roll it over and put in a tray and bake in the oven for about 15′ at 180°C
Add more artichoke sauce if you want at the end, and some nuts spinkled on top
