- 1kg potatoes
- 150 ml milk
- 2 eggs
- 6-8 tablespoons parmesan
- 250g asparagus
- 1/2 onion
- olive oil
Clean the asparagus and cut in cubes, put them in a pot with chopped onion, salt, olive oil and cook until tender.
Boil the potatoes in salt water until tender and drain them.
Use the pot to warm the milk and then mash them with a potato masher.
Add parmesan and parsley and stir. When it’s cooled down add the two eggs. Adjust salt and pepper.
Heat the oven at 200/220°C and prepare a tray with baking paper
Put the purée in a sac a poche and prepare the nests.
Bake in the oven until they are browned.
Add on top the asparagus and serve
