- 300 g Chickpeas and lentils cous cous
- 1 carrot
- 1 courgette
- 1/2 onion or leek
- 200 g little tomatoes
- 3 sprigs of thyme
- 3 garlic cloves
- salt, pepper, olive oil
- brown sugar
Pre-heat the oven ta 200°C
Cut in half the tomatoes and lay them in a tray, chop thyme and 2 garlic cloves together, then sprinkle the tomatoes with this mix and olive oil, salt and brown sugar (just a little bit)
Put in the oven for 20′, until they are really softened and caramelized
Cut the courgette and carrot into strips, put in a pan with chopped onion and leek, a clove of garlic, olive oil, salt and pepper. If you like, add basil. Cook until tender.
In the meantime, cook the cous cous following the instructions on its package.
When ready, put all together and serve hot!
