Vegan lemon and olive oil cake

Difficulty: easy



  • 500 gr spelled flour
  • 150 gr brown sugar
  • 140 gr olive oil
  • the juice of 2 lemon + water until it reaches 200 gr
  • 2 lemon peel
  • 12 gr baking powder
  • a pinch of salt


Pre-heat the oven at 180°

Grate the peel of two lemon and then squeeze the juice.

Add water to the juice until it reaches 200 gr.

Mix the flour, the sugar, the peel, baking powder. Add little by little the olive oil and then the lemon juice. Add a pinch of salt.

Pour in a mold and bake for about 30′-40′ until the toothpick come away clean
