- 2 aubergines
- 3 peppers
- 2 big tomato, or 4 smaller
- 1 onion
- olive oil
Cut all the vegetables in pieces and put them in a pot with 4-5 spoons of olive oil. Cover with the lid. Stirr every 5 minutes.
Cook for about 30’/40′ until all the vegetables are ready.
Story of the recipe
This is a tipical italian summer dish, I think I used to eat this 3-4 times a week when I was younger!
Simple but with a strong taste, it’s perfect in hot times because it doesn’t require the oven!
