(Kaiserschmarrn) bavarian pancake with raisin

Difficulty: easy

Ingredients:

  • 3 tablespoons raisins
  • 3 tablespoons hot tea
  • 4 large eggs (seperate the egg yolks & the whites)
  • 1 pinch salt
  • 3 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 3/4 cups milk
  • 1 cup flour
  • 2 tablespoons butter
  • powder sugar to sprinkle on top

Procedure:

Soak the raisins in hot tea for 10 minutes or until soft then drain the tea and set the raisins aside.

Beat the egg whites& salt until fluffy.

In a sperate bawl beat the egg yolks, sugar and vanilla.

Add the flour & the milk gradually and mix.

Fold in the egg white in the egg yolk mixture.

Add the butter in a frying pan and wait until hot then add all the batter and sprinkle the raisins on top.

Cover the pan and let it cook on medium to low heat for about 7 minutes.

Using a fork cut the pan cake into 4 pieces and flip each one to cook the other side.

When the pancake is throughly cooked, pull it apart into small pieces and pour it into the serving plate & sprinkle powder suagar on top.
