Spinach omelette with pine nuts

Difficulty: easy



  • 5 eggs
  • 2 potatos, boiled
  • 200g boiled spinach
  • 1/2 onion, chopped
  • 10g pine nuts
  • salt & pepper
  • olive oil


Boil the spinach and potatoes.

Sauté the onion with pine nuts in a pan with olive oil, add the boiled spinach and potatoes, add salt and pepper.

In a bowl mix very well the eggs and then add the veggies.

Cook in the pan and with a plate turn the omelette over after 3 minutes.

Serve hot or cold as you prefer
