- 150 g ground digestive cookies
- 60 g melted butter
- 380 g frish cream cheese
- 350 ml sweetened condensed milk
- the juice of 2 lemons
- 125g whipped cream
- Lemon zest for decoration
Mix the ground cookies with the melted butter until well combined then spread in a small cheese cake pan and press to make the crust.
In a mixing bowl add the frish cheese, the condense milk and the lemon juice.
In a seperate bowl whip the whipping cream until fluffy and fold into the cheese mix.
Pour the mix on the cookie layer and place in the refrigerator for 4 hours.
Sprinkle some lemon zest on top before serving.
