- 2 packs savoiardi biscuits
- 6 eggs
- 9 espresso coffes with moka
- 100 g sugar
- 500 g mascarpone cheese
- bitter cocoa powder
Separate the yolks and the whites. Whip the whites then in an other bowl mix the yolks with the sugar and then little by little the mascarpone cheese.
Mix the two things gently with a wooden spoon from the bottom to the top
Prepare the 9 espresso coffes, soak rapidly the sovaiardi biscuit in the coffe then lay it in the tray.
Cover with the cream prepared.
Repeat the procedure with an other layer and cover with the cream
Put in the fridge and just before serving sprinkle with cocoa powder
