- 1/2 cup soft unsalted butter
- 3/4 cup sugar
- 1 egg
- 1/2 teaspoon coconut extract or vanilla extract
- 1 cup all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup chocolate chips
- 1/2 cup shredded coconut
Add the butter and the sugar in a mixing bowl and mix together
Add the egg and the coconut extract and mix.
Add the flour, the salt and the baking soda and mix.
Fold in the chocolate chips & the shredded coconut and mix.
Scoop the dough using a spoon and place on a baking sheet.
Bake in a preheated oven at 180C for about 10/15 minutes until golden.
Let the cookies cool on cooling rack.
