Chewy apple raisin cookies

Difficulty: easy

Ingredients:

  • 200 g lowfat curd cheese
  • 100 ml oil
  • 1 teaspoon vanilla extract
  • 110 g granulated sugar
  • 300 g all purpose flour
  • 1 teaspoon baking powder
  • 2 medium size apples peeled & diced into very small cubes
  • 1/4 cup raisin
  • 3 tablespoon granulated sugar mixed with 1/2 tablespoon ground cinnamon for sprinkling

Procedure:

Add the curd cheese, the flour, the sugar, the oil, the vanilla extract and the baking powder to a mixing bowl and mix until combined.

Add the diced apple and the raisin and mix.

Use a spoon to scoop the sticky dough into balls & place them on a baking sheet lined with parchement paper.

Flatten the balls with the back of a spoon .

Bake in a preheated oven at 180C for about 20 to 25 minutes.

Take the cookies out of the oven and immediately sprinkle with the sugar cinnamon mix.
