Procedure
It is recommended to prepare the momo filling the evening before and refrigerate it.
Mix the shredded cabbage, shredded and minced onion, minced garlic, green chilli minced, ginger minced, salt, pepper and mix well together.
Lightly stir the chicken in a pan 4-5 mins and add the mixed preparation to it for 2 more minutes of saute. Remove and set aside.
For the sauce, take 2-3 Red Chillies, onions and a tomato, and boil them forc5-10 mins. After cooling them down, blend it and refrigerate it.
Next Day, roll out the dough or make it in any shape you want , put the momo filling and seal it like a bag (with the help of water at the edges!)… You can make pleats, keep it in an elongated shape or make it circular, your wish!
Fry the onion ,garlic, ginger, and add cabbage minced, and carrots minced, add salt & pepper, then add the bones. After 2 mins, add water and the noodles.
You can add MSG if you wish to. Or overlook this part. A pinch of cornflour can also be added.
Keep it on until it boils for 10-15 mins and add scallions 30 secs before switching off.
In the meantime, you can Boil, Steam or deep fry your momos. Deep fry is quicker, tastier and an easier method. Steaming is the healthier choice and still very very tasty. It can be done in a rice cooker. Alternatively you can fry the bottom and boil it complete the cooking process.
Choose your pick.
Finally, saute your sauce in a pan, add a bit of salt and sugar and make sure the heat is as per your family’s taste. Just 30 secs before, add minced green onion or scallions and toss them together.
Serve piping hot! Enjoy!
Story of the recipe
This is more Indian/ Nepalese way of preparation. Also known as Dumplings in S. E Asia and China.
:We have it all year round but in Winter it is a really enjoyable brunch option!
It’s perfect to treat your family or yourself! It is a bit labour intensive but the taste is worth it.
There are several youtube videos on how to fold or pleat momos but practice definitely makes it perfect. The taste is amazing nevertheless!
One of my favourite dishes and I hope you and your family enjoys it as much as we do
Happy Holidays Squaddies!
Bon Appetit
