- 500 gr topinambur
- 2 potatoes
- 4-5 cm leek
- salt& pepper
Peel the topinambur and the potatoes.
Put them in a pot with chopped leek, salt and water.
Cook for about 25’/30′ until the veggies are softened
Them blend them all, sprinkle with chives, add olive oil and serve
