Gluten Free Almond Shortbread Cookies

Difficulty: easy

Ingredients

1 cup of finely ground Almond Flour
4 tbsp of soften butter
1/2 teaspoon of Vanilla extract
1/8 teaspoon of Almond extract
1:8 teaspoon of salt
4 tablespoons of confectioner sugar

Directions

Put all the ingredients in a bowl and stir until it comes together.

Scoop with a spoon or ice cream scoop #40.  Place on a sheet pan with a silo at or parchment paper.  Bake for 30 minutes or until nicely browned.

Very important cool the cookies in the pan for 5 minutes and then transfer to a cooling rack. 

They will solidify as they cool.  Also they do spread so space evenly.  Enjoy these delightful gems.
