- 4 eggs
- 3/4 cup granulated sugar
- 1/2 cup butter milk
- 1/2 cup oil
- 1 teaspoon coconut extract
- 1/2 teaspoon salt
- 1 1/2 cup plain flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup chocolate chips
- 1/2 cup chredded coconuts
Add the eggs and the sugar in the mixing bawl and mix until creamy.
Add the coconut extract, the butter milk and the oil and mix again .
Add the flour, the baking soda, the baking powder and the salt and mix.
Add the chocolate chips and the chredded coconuts and mix.
Pour the batter in a baking pan lined with butter and flour and bake in a pre heated oven at 170 C for about 45 minutes or until a skewer comes back clean.
Enjoy with a scoop of coconut icecream on the side.
