Lentils croquettes

Ingredients

  • 150 g red lentils (hulled lentils)
  • 1/4 onion
  • 4 little tomatoes
  • 1/2 garlic clove
  • 1/2 carrot
  • 1 egg
  • parsley
  • 5 spoons grated pecorino cheese
  • 4 spoons bread crumbs
  • 1 cm chopped leek
  • salt&pepper

Directions

Boil the lentils for 10/15 minutes (check the instructions) with the onion, tomatoes, carrot and salt.

When they are ready, blend everything, then add the egg, bread crumbs, pecorino cheese, parsley, fine chopped garlic, fine chopped leek, salt and pepper.

Rest the mix in the fridge for 15-20 minutes.

Then roll little balls in bread crumbs and gently fry then in a apan with olive oil for 5′
