For the quiche
- 250 g flour type 0
- 1 teaspoon salt
- 90 g sunflower oil
- 100 g warm water
- 3,5 g instant yeast
Mix these ingredients in this order, the batter doesn’t need to rest in the fridge.
For the fill
- 1 broccoli
- 2 slices onion
- 1 garlic clove
- olive oil
- 1/2 lemon juice
- 1 tablespoon sunflower seeds
- 150 g fresh cheese (I used crescenza cheese)
- Chili pepper& anchovy fillet optionals
Cut the broccoli in pieces and boil them in salted water and lemon juice. Drain them and set aside.
Chop the onion and garlic and fry gently in a pan, optional add an anchovy fillet adn chili pepper. When ready add the Broccoli and mix well. In a bowl, mix together broccoli mix and cheese.
For the quiche, mix all the ingredients in the order written above, the batter doesn’t need to rest in the fridge. roll out with a rolling pin in a baking paper.
Pre-heat the oven at 180°C. Fill the tray with the broccoli mix, add the sunflower seeds on top and bake for 30′ more or less.
