Egg rolls with spinach

Difficulty: easy


  • 3 eggs
  • 200 gr boiled spinach
  • 50 gr ricotta cheese
  • 50 gr parmesan cheese
  • salt & pepper


Separate the yolks and the egg whites. Whip the whites with a little salt, then add them gently to the yolks and stir from the bottom to the top. Add salt, pepper, parmesan

Cover a tray with baking paper, pour the mix and bake at 180° for a few minutes.

Squeeze the spinach, add ricotta cheese, salt and pepper as you wish. Lay the mix on the baked eggs. Roll over.

Cut and serve
