- 1/2 cup unsalted andmelted butter
- 1/2 cup honey
- 1 egg
- 1 1/4 cup all purpose flour
- 1 cup milk
- 1 cup oatmeal
- 1/2 cup raisins
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- a pinch of salt
Soak the oatmeal in the milk for about 20 minutes.
In the meanwhile melt the butter and let it cool down then add it to a bowl.
Add in the honey, the egg, the vanilla extract and the cinnamon and mix it well.
Add the flour, the baking soda, the baking powder and the salt and mix well.
Add in the oatmeal and milk mixture and the raisins and mix.
Pour the batter in the muffin liners, filling them to the top.
Bake in a preheated oven at 210 C for about 5 minutes then lower the temprature to 170 C and continue baking for about 20 minutes or until a skewer comes out clean.
