Ingredients
- potatoes
- carrots
- courgettes
- peppers
- any other veggie you like
- any herb you like (parsley, garlic…. )
Directions
Blanch potatoes for ten minutes in salted water.
Put a variety of herbs in a pan with olive oil. Toss around. Bake at 375* until toasty and veggies al dente
