Roasted Fingerling Potatoes and Veggie

Difficulty: easy


  • potatoes
  • carrots
  • courgettes
  • peppers
  • any other veggie you like
  • any herb you like (parsley, garlic…. )


Blanch potatoes  for ten minutes in salted water.

Put a variety of herbs in a pan with olive oil. Toss around. Bake at 375* until toasty and veggies al dente
