- 300 gr butternut squash
- 1 carrot
- 1 potato
- 1/2 onion
- 1 shallot
- crouton (I used croutons with chives flavour… perfect!)
- sal, pepper, olive oil
- Vegetable broth
In a pot put the chopped pumpkin, carrot, potato onion and shallot with olive oil.
After 2 minutes, add hot vegetable broth that cover all the vegetables.
After 20′ mix everything with a blender. Adjust salt, pepper then serve with croutons and olive oil on top!
