Butternut squash soup

Ingredients

  • 300 gr butternut squash
  • 1 carrot
  • 1 potato
  • 1/2 onion
  • 1 shallot
  • crouton (I used croutons with chives flavour… perfect!)
  • sal, pepper, olive oil
  • Vegetable broth

Directions

In a pot put the chopped pumpkin, carrot, potato onion and shallot with olive oil.

After 2 minutes, add hot vegetable broth that cover all the vegetables.

After 20′ mix everything with a blender. Adjust salt, pepper then serve with croutons and olive oil on top!
