- 6 pieces of chicken
- 6 lemons
- 1 kg of baby potatoes
- 6 small red onions
- carrots (optional)
- about 6 cloves of garlic
- 1 cup oil
- salt and pepper
- 1 tablespoon powder garlic
- 1 tablespoon chopped fresh or dried rosemary
- 1 tablespoon catchup (to add color to the chicken)
Squeeze 5 lemons and add the juice to a large bowl. Save the last lemon for roasting.
Add the oil, rosemary, garlic powder, salt and pepper and mix well.
Marinate the chicken in that mixture for 4 to 5 hours or leave it in the fridge overnight.
Place the chicken in the roasting pan. Add the potatoes, garlic cloves, onions and carrots. Slice the last lemon and add it to the pan.
Pour the marinate liquid on top of the chicken and place it in a preheated oven at 180C and bake for about 40 minutes or until well roasted.
Decorate with chopped herbs and sliced lemons.
