- 1/3 cup soft unsalted butter
- 3/4 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 tablespoon instant coffee powder dissolved in 1 tablespoon of hot water
- 2 cups all purpose flour
- a pinch of salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
with a mixer beat the butter until fluffy then add the sugar and mix.
Add the eggs and the vanilla and mix.
Add the coffee solution after it cooled down and mix.
Add the flour, the salt, baking powder, baking soda and mix.
Press on the balls using a fork forming a cross shape.
Place 1 side of the cookie in granulated sugar then place it on a baking sheet lined with parchment paper.
Bake in a preheated oven at 200 C for about 10 minutes until lightly brown.
