- 1 cup soft unsalted butter
- 1 cup brown sugar
- 2 cups shredded coconut
- 2 1/2 cup all purpose flour
- 2 eggs
- 1 teaspoon vanilla extract
- a pinch of salt
- shredded coconut to role the cookies in
- 1 teaspoon baking soda
Add the butter to a bowl and beat with a hand mixer until fluffy.
Add the sugar and mix.
add the eggs and the vanilla and mix.
Add the flour, salt and baking soda and mix
Add the shredded coconut and mix until incorporated (don’t overmix).
make small balls of dough and role them in shredded coconut then place them on a baking sheet lined with parchment paper.
Press the dough balls using a fork .
Bake in a preheated oven at 350°F or180°C for about 10 minutes.
Transfer the cookies to cool on a cooling rack.
