- 110 gr pearly barley
- 30/40 gr butter
- 1 big carrot
- 1 celery stalk
- 1 onion
- 1 potato
- 60 gr ham in cubes
- 1 laurel leaf
- salt & pepper
Chop the veggies.
In a pot warm the butter, then add carrot, onion and celery, not the potato .
Wash the barley, rinse and after 3-4 minutes add it to the pot, add also the ham
Cover with vegetable broth, add chopped chives and the laurel leaf
Follow the suggested minutes for cooking the barley and 15 minutes before the end add the potatoes
Adjust salt and pepper
This soup is excellent and basic. I also garnish this with a small dollop of sour cream. My family loves it.
