Ingredients
- 4 eggs
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup butter milk
- 1/2 cup sunflower oil
- 1 teaspoon ground cinnamon
- pinch of salt
- 1 1/2 cup all purpose flour
- 1 1/2 teaspoon baking powder
for the topping
- 2 apples peeled and sliced
- 2 tablespoon butter
- 2 tablespoon brown sugar
- 1 teaspoon ground cinnamon
Procedure
In a bowl add the eggs and mix until fluffy.
Add the sugar and the vanilla extract and mix until creamy.
Add the oil, the cinnamon, the salt and the butter milk und mix well.
Add the flour and the baking powder and mix slightly until it is incorporated. Don’t over mix. Set the batter aside.
In a skillet add the butter, the brown sugar and the cinnamon and heat on the stove on low heat and stir until the butter is melted.
Add the sliced apples and let them cook for few minutes on both sides. Don’t let them get brown.
In a butter lined small baking pan transfer the apple slices and pour the melted butter sugar mixture on top.
Pour the cake batter on top of the apples and bake in a preheated oven at 180 C for about 40 minutes or until a skewer comes out clean.
Wait for the cake to cool a little then turn the pan on your serving plate.
Slice and serve with a scoop of vanilla ice cream.
