“Gnocchi alla romana” with zucchini

Ingredients

  • 1 litre milk
  • 200 gr semolina
  • 1 zucchini
  • 1 slice of onion
  • 1/2 garlic clove
  • butter
  • 3 yolks
  • parmesan
  • salt, pepper, olive oil

Directions

Grate the zucchini and cook it on a pan with the onion, garlic, olive oil, salt and pepper.

Boil the milk, salt it, then little by little, pour the semolina stirring with a wooden spoon. Cook it for 20′.

Add the zucchini, add 60 gr of grated parmesan.

Mix the yolks with a little milk.

Turn off the stove, then add the 3 yolks.

Prepare a tray with wet baking paper and pour the dough. With a wooden spoon, level it to 1 cm high.

Leave it cool down. With a wet glass, do some discs. I did 18 discs with this quantities.

Butter a tray and lay the discs, Add curls of butter on top and put in the oven at 180°/190° for 15’/20′.

Add parmesan ad the end and serve.
