- 300 gr cous cous
- 1 eggplant
- 50 gr dry tomatoes
- 1/2 onion
- olive oil
Cut the eggplant into fillets and put them in a pan with the sliced onion olive, salt. Add water if needed.
In the meantime prepare the cous cous following the directions of its packaging.
Drain the dry tomatoes and when everything it’s ready, mix all together.
