Ingredients
- 50g cocoa powder
- 6 tbsp boiling water
- 3 large eggs
- 50ml milk
- 175g self raising flour
- I tsp baking powder
- 100g softened butter
- 275g caster sugar for the icing and filling .
- 150ml double cream
- Two 8in sandwich tins
- 150g plain chocolate solids
Directions
Preheat the oven to 180°C /Fan 160°C/ Gas 4 (I Preheat my fan oven at 140°C it bakes my cake slowly, hence my chocolate cake is moist)
Grease the two sandwich tins with a small amount of butter or grease paper. Mixed the cocoa and boiling water in a large bowl, then add the remaining cake ingredients and beat until mixture has become smooth, batter.
Divide the cake mix equally in the two tins. Bake in pre-heated oven for approx 25-28mins or until well risen . Leave to cool tins for a few minutes.
To make fudge icing
Breakup 150g of plain Chocolate, and heat with cream in a heatproof bowl set over a pan of hot water for about 10 minutes or until Chocolate is melted. I usually start preparing the icing before removing the cake from the oven. (You can also purchase the fudge icing at your supermarket ) its quicker
Please stir the melted chocolate occasionally. Remove bowl from the heat and make sure chocolate is completely melted . Spread melted chocolate on both sides of the cake. Sandwich the cakes together and use a palette knife to spread and smooth icing on top of the cake.
