Oyster mushrooms sandwich

Ingredients

  • oyster mushrooms
  • Slices of cheese
  • 2 eggs
  • Cup of flour
  • Sliced bread
  • Fresh onion
  • fresh tomatoes
  • ButterPickles (recipe to make own pickles added)
  • Teaspoon of chilli flakes
  • Lettuce
  • Mayonaise
  • Pinch of black pepper
  • Table spoon of lemon juice

Directions

Begin by deep frying the mushrooms KFC style. (Marinate the mushrooms in a spice mix – cumin, black pepper, paprika, garlic powder, onion powder, seasoned salt- for as much time as you can, even 15 minutes is fine. Then coat the marinated mushrooms in the two eggs you have beaten and added chilli flakes to. Transfer the egg coated mushrooms to flour which you have added a pinch black pepper too for extra seasoning. Deep fry, 3 minutes and rotate.)

Put the now deep fried mushroom aside for later when assembling sandwich

Butter one side of bread and place the butter side flat on the pan with a slice of cheese facing up.

Let it sit on low heat for a while as the cheese melts.

When the cheese has melted to a point that is satisfactory to you, take the bread off the heat and transfer it to a plate with the buttered side sitting on the plate and the cheese side facing up.

Add slices of red onion, then slices of tomato, then add the deep fried oyster mushrooms.

Then add pickles (if non readily available, homemade pickles can be made by soaking cucumber in a water-vinegar-salt mixture for about 2 to 24 hours depending on bow much time you have).

After the pickles add leaves of lettuce on top. 

Before you add the last slice of bread to seal your sandwich, get a small bowl and put in one large tablespoon of mayonnaise, add the lemon juice and a pinch of black pepper and mix. This will act as an extra dressing.

Spread this dressing on the side of the slice of bread that will be on the inside of the sandwich with the non spread side facing up.
