- 500 gr flour type 0
- 300 ml warm water
- 35 gr dry mother yeast
- 12 gr salt
- 2 tablespoons olive oil
- 250 ml organic tomato sauce
- 2 mozzarella cheese (choose good ones, you won’t regret it!)
- other ingredients you want on top
Mix the flour and the dry mother yeast together.
Make a hole in the flour and add little by little the water, mixing from the center. Add the salt then knead by hand.
The dough must be left to rise for 2h and 30′ in a bowl covered with a wet tea towel in a dark place.
Them roll the dough by hand and very gently in an oiled tray. just widen it gently with the hands, to not break the leavening.
Pre-heat the oven at 170° and cover the dough with the tomato sauce and the oregano.
Bake it for 17/20′.
Then add the mozzarella cheese cubes and all the other ingredients on top.
Bake again for 7′ more.

This is my husband special recipe, Vise is in fact his nickname!
He likes a good high homemade pizza… so he’s in charge and no one can fly around while he’s cooking!
He spent ten years to perfect doses, times, degrees… so it’s really “special” to us!
