Double eggplant paté

Patlican ezme and Patlican ezme yogurt

  • eggplant
  • garlic
  • olive oil
  • salt
  • chili flakes on top

Second version, you just add these ingredients

  • unflavored yogurt
  • sour cream
  • chili flakes

Grill eggplant until soft.

Cool, scoop out the meat, separating from skin.

For every 2 cups of eggplant add 1 clove grated garlic and 1/4 cup if olive oil, mix with spoon gently combining until smooth , salt to taste. Spread on toast/bread. (also good on spegetti).

A second version, take 1 cup if above mixture add one half cup unflavored yogurt or 1/3 cup sour cream, mix. Serve both versions with olive oil drizzled over the top and sprinkle with chili flakes.
