In the prologue of “Finding Freedom“, the author Omid Scobie reveals that “Happy Meal” was one of prince Harry’s favourite moments with her mother, princess Diana, who fought to raise him like a normal child.
In this spirit @Guendolyn79 tries to recreate an “Happy Meal” for the wonderful adult he is now. So this Hamburger is healthier but nevertheless tasty and totally homemade with selected and refined ingredients that reflect his work: QUALITY ABOVE ALL.

For the hamburger buns
- 500 gr flour type 0
- 30 gr soft butter
- 100 ml warm water
- 100 ml warm milk
- 7 gr dry brewer’s yeast
- 1 tablespoon brown sugar
- 12 gr salt
- 1 yolk
- sesame seeds
For the hamburger
- 200 gr sorana hamburger (female calf under twenty months of age and never giving birth) for each person
For the confit-tomatoes
- 2 tomatoes
- 5 sprig of thyme
- 2 garlic cloves
- olive oil
For the onion rings
- 1 big Tropea onion IGP (typical italian red onion)
- 60 gr flour
- 1 egg
- really sparkling water
- peanut oil
For the cheese
- Slices of Leerdammer cheese (typical Dutch cheese)
DIRECTIONS FOR THE BUNS
Mix together the flour with the yeast and sugar.
Mix warm water and warm milk together.
Add the soft butter and then, little by little milk+water .
Knead well and add the salt.
Knead again for 10 minutes.
With a knife, do a cross in the dough, cover with a wet tea towel and leave to rest for 2 hours.
I did 3 buns (really big ones!) but I think you can do 4 buns. Leave them rest under the wet tea towel for 45 minutes more.
Pre heat the oven at 180°
Then brush with egg and sprinkle with sesame seeds.
Bake for 25′
DIRECTIONS FOR THE (ALMOST) CONFIT TOMATOES
While the buns are rising, cut in slices the tomatoes, sprinkle on top some salt, some sugar and oil.
Chop together the garlic and thyme and add on top of the tomatoes.
Put them in the oven at 180° for 1h
DIRECTIONS FOR THE ONION RINGS
Slice the onion into rounds and put them in cold water for 10 minutes. Bloth them with a tea towel
Mix together flour, egg sparkling water and salt. Prepare the breading in a dish.
Soak the onion rings first in the batter and then in the breading
Fry the rings in a pan with hot peanut oil for 4/5 minutes
COMPOSE YOUR HAMBURGER
Grill the hamburgers. Cut the hot buns and put the cheese slices when it’s still hot, so the cheese melts.
