Chanterelle mushrooms and prosecco risotto

  • 350 gr “Vialone nano” rice
  • 100gr chanterelle mushrooms
  • 1 glass prosecco
  • 2 onion slices
  • 50 gr pecorino cheese
  • 1l vegetable broth
  • parsley at the end


Chop the mushrooms and put them in a pot with the chopped onion and olive oil.

When the onion is sauté, add vegetable broth and salt. Cook for about 20′, stirring every 5 minutes.

When the mushrooms are ready, add the rice and cook for about 5′, then douse with the wine.

Then cover with boiling vegetable broth, adding little by little and stirring continously.

5′ before the rice is ready, add the cheese.

When it’s ready put some parsley on top
