Dry Ingredients
- 1 cup all-purpose Flour
- 1 teaspoon salt
- 1 teaspoon baking Soda
- 1-1/2 teaspoon cinnamon
Wet ingredients
- 1 egg
- 1/2 cup vegetable oil
- 1 cup sugar {brown & white)
- teaspoon vanilla extract
Other ingredients
- 1 cup grated zucchini
- 1/2 cup walnuts, chopped
- 1/2 cup sour cream
Procedure
Put dry ingredients in a bowl and whisk lightly.
Beat wet ingredients in separate bowl until smooth and creamy.
Combine dry and wet mixture and beat on low speed.
Add the Zucchini and walnuts with spatula until fully combined.
Add the sour cream last and mix well.
Pre-heat the oven 350°F.
Grease the loaf pans, and sprinkle with flour and tap the excess flour.
Pour the batter into the pan and bake for about 45 minutes (or until when toothpick comes clean).
Let cool in a rack once done.
