- 4 round zucchini
- 1 carrot
- 1/4 pepper
- 70 gr basmati rice
- 2 onion slices
- 1 garlic clover
- 50 gr aged cheese in cubes
- salt, pepper, olive oil
Put the zucchini in boiling salt water for 10′
Put the rice in salt water and cook it.
In the meantime cut the vegetables in cubes and put in a pan carrot, pepper, onion, garlic with 4 spoon of olive oil and a pinch of salt. If neccessary add water or vegetable broth.
Add thyme when the vegetables are cooked.
Drain the rice, add the vegetables and when it has cooled down add the cheese cubes.
Cut the upper part of the zucchini, and remove the inner part.
Fill the zucchini with the rice and put them in the oven for 40′ at 180/200°
