Peppers filled with tuna

Ingredients

  • 2 big peppers
  • 1 egg
  • 1/2 cup grated bread
  • 1 can of tuna (100gr)
  • 2 medium potatoes
  • 12 olives
  • 6-7 little tomatoes
  • 4-5 capers
  • thyme (just a little)
  • salt (if needed)
  • 2 spoons of olive oil

Procedure

Cut in half the peppers, clean them from seeds and put in a tray in two spoons of olive oil

Cut the potatoes in little pieces and put to boil in salted water.

In the meantime cut in little pieces the olives, the little tomatoes, add all the other ingriedients. Wait to the potatoes to cook, then leave to cool down a little, then add them. Adjust salt if needed.

Fill the peppers with all that mixture and put in the oven at 220Β°C for 45 minutes.

My husband came out with this recipe one night that I was too tired to cook and we had a lot of leftovers

I think peppers can be filled with almost everything and they are super good, but we love this recipe a lot, we make it every week in summer!
