Ingredients:
- 1/2 cup soft unsalted butter
- 3/4 cup brown sugar
- 2 eggs
- 1/2 cup plain yogurt
- 1 and 3/4 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- pinch of salt
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
Procedure:
Beat the butter until smooth then add the brown sugar and beat until creamed.
Add the eggs, the yogurt and the vanilla extract and beat together.
Add the flour, baking powder, baking soda, salt and ground cinnamon and mix together.
Fold in the chocolate chips
Preheat the oven to 350°F (180°C).
Spray the muffin pan or line with cupcake liners.
Fill the pan with the batter. Make sure it is filled to the top.
Bake for 20 minutes
Story:
I got this recipe from a high school friend many years ago. She won a bake sale contest with it. I make it regularly for breakfast since then. My kids like it very much
