Recipe for 6-8 people Time: 10′ Difficulty: easy

Ingredients:
- 1kg zucchini
- 3 little onions / 2 big ones
- 2 glasses of olive oil
- 1 glass of vinegar
- 1 spoon salt
- 1 spoon salt

How to do it:
- cut all zucchini and onions
- put in a pan with oil, vinegar, salt and sugar (I prefer the brown sugar)
- cook for 8 minutes, until all zucchini change color
- eat cold preferably

Don’t worry about quantities, you can pour it in a mason jar, sterilize and open in winter! It’s sooooooo good and fresh even after months!

Story of the recipe
My little one has always been very picky about vegetables. When she was very little she loved only cauliflower, fennel and carrots! strange girl!
Luckily my mother in law gave me this recipe and now she really goes crazy about zucchini! And as in all italian families this recipe has been passed to everyone so now my mother, my sister, my sisters in law, my uncles, my aunties…. we all cook it!
I use this type of zucchini which we call “zucchini romani” translated as roman zucchini, my mom grows them and they are perfect because they seem little stars when cut… but you can use normal zucchini!
