Thai coconut milk soup

Difficulty: easy

Ingredients:

Olive oil

onions

roasted garlic

thyme bay leaf

s&p & cayenne pepper plus a pinch of Thai seasoning to start

Zucchini

brussel sprouts

cremini (brown) mushrooms

greens (double to everything else)

Vegetable broth

Procedure:

Let simmer. Puree everything when it’s cooked.

Add coconut milk.
